It's cold and rainy again in Portland; I think I'll make hand pies--a few with cauliflower and a few with lamb. We have a ton of peas and radishes to pick, too, so you can bet what we'll being eating with our pies. :)

Pound cake is in the oven. Just made a cilantro-cashew pesto for the herbed chicken that we'll have tomorrow night. Serving with salad greens & radishes from the garden (yippee!!!), rice & roasted beets from the farmer's market. Colorful & delightful. The strawberries I picked yesterday will top the pound cake. Glad company is coming!

I am pickling carrots with a recipe from "A Homemade Life" and making strawberry gelato with market strawberries!

Pizza for dinner tonight, pork tenderloin tomorrow and not sure about Sunday.

I love the weekends.

Last night to stretch some leftover chicken I made Risi e bisi (rice with peas), leaving out some broth so it was more like risotto. Tonight we have company for Father's Day and I'm about to coat a turkey breast with a rub and I'll grill or roast it later. Someone is bringing fruit and I think I'll do corn on the cob (if I can find some) and maybe a pasta salad.

I am enjoying bitter greens sauteed in olive oil, with some sea salt & black pepper, topped by a poached egg. I get huge bunches of random greens in my veg box each time and instead of letting them rot (what I WAS doing) I am not chopping & sauteeing them as soon as I can, then storing them in the fridge for this delicious combination.

Grilled peach salsa nachos: organic white corn tortilla chips, Trader Joe's peach salsa, leftover grilled peaches, sharp cheddar and cotijo cheeses, black olives, bake and then squeeze a little bit of lime juice over the top

Homemade lemonade: lemon juice, spring water, lemon juice ice cubes, simple syrup or honey so you can sweeten to taste

Risotto cake: leftover risotto, patted into a cake tin, topped with parmesan and baked until set, slice like a quiche, serve cold or hot or room temp (or just stand in front of the fridge eating a slice)

Strawberry jam! It's raining again, so that will be the afternoon project with my little girl. The morning project was going to the farmers market to get the berries.

I'm also making a version of that gorgeous Genovese minestrone featured here last week. I've got some pesto to use up, and I made a broth in the Crockpot while we were out this morning.

A simple Israeli cous-cous covered in home grown and home made pesto sauce topped with a sliced home grown purple cherokee tomato and a sprinkle of feta. I am a happy camper.

Bagels. Time to use up some no-knead dough from the fridge. They came out pretty good.
Time to go out and harvest greens from the yard - lettuce and arugula, beet, chard, and spinach. Peas too.

Last night was spaghetti w/frisee, bacon and a fried egg on top (EF), this evening we'll be meeting my brother and sister-in-law for a picnic at their and my husbands alma mater so we are bringing pressed sandwiches as the "main" along with oil cured olives and they are providing the sides. Tomorrow will be whatever my hubby wants for breakfast and then dinner will be a smoked turkey breast.

German Festival Ham and White Bean Stew from Donald Link's Real Cajun cookbook. When we planned it and bought the groceries, it was rainy and cold, and now that it's sunny and humid it seems a bit out of place. But it smells great -- like mustard and rosemary -- and I wanted to use the local white beans I just found. Can't wait!

Like cmcinnyc I made Strawberry Jam today. My first ever canning project (and first time ever making jam). I think they all came out well, the lids have all pinged, and the "test spoons" tasted great!

Made a great meal with my dad, Individual Beef Wellington's with Madeira Mushroom sauce--incredible. Grilled Balsamic vegetables, Boursin mashed potatoes, and cheese straws.

Getting ready to enjoy the Strawberry Rhubarb Pie I made with many missing strawberries because the farmer's market ones were so incredible I couldn't stop eating them!
